Ingredients
1 1/2cupsrolled oats
1cupgrated carrot
3/4cupdates, soaked 30 minutes and drained
3/4cupvanilla protein powder
1/2cupnatural almond butter or peanut butter
1teaspooncinnamon
1teaspoonvanilla extract
1/4teaspoonnutmeg
Pinch of sea salt
Optional: ΒΌ cup chopped walnuts, pecans, or raisins
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Add rolled oats to a food processor and pulse until they resemble coarse flour.Add grated carrot, dates, almond butter, protein powder, cinnamon, vanilla, nutmeg and salt and process until fully combined and slightly sticky. If needed, add 1β2 teaspoons of water or almond milk.Fold in any optional add-ins by hand.Press the mixture into the prepared tin and smooth the surface.
Cream Cheese Protein Frosting
Soften the cream cheese by leaving out at room temperature for an hour or so or give it a 10second burst in the microwave.In a bowl, mix all frosting ingredients until smooth and creamy.Spread frosting evenly over the base.Chill for 1β2 hours, or until firm, then slice into 8-10 bars or more smaller squares.Store slices in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
