Ingredients

Protein Ball Base

  • 1 cup rolled oats
  • 1 cup dates, soaked 30 minutes and drained
  • 3/4 cup grated carrot
  • 1/2 cup vanilla protein powder
  • 1/3 cup almond butter or peanut butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of sea salt

Optional Add-Ins

  • 2 tablespoons chopped walnuts or pecans
  • 2 tablespoons raisins
  • 2 tablespoons shredded coconut

Coconut Butter Glaze

  • 1/4 cup coconut butter, store bought or homemade recipe link below in notes
  • 1-2 teaspoons maple syrup (optional, for extra sweetness)
  • 1-2 teaspoons warm water, if needed for drizzling consistency

Instructions

  • Add rolled oats to a food processor and pulse until they resemble coarse flour.
    Add dates, protein powder, grated carrot, nut butter, cinnamon, nutmeg, vanilla, and salt.
    Process until the mixture becomes soft and slightly sticky. If needed, add a teaspoon of water or almond milk.
    Stir in any optional add-ins by hand.
    Roll into 12-16 individual balls approximately 1½ tablespoons each.
    Place on a lined tray and chill in the fridge for 20–30 minutes to firm up.

Coconut Butter Glaze

  • Gently melt coconut butter in a small dish with 10 second bursts in the microwave or place the jar in hot water until the coconut butter melts.
    Measure out ¼ cup and stir in maple syrup if using.
    Add the maple syrup (if using) and milk and whisk until combined and a thick (but spreadable) glaze has been formed. Add additional milk and/or maple syrup to thin if needed.
    Using a spoon, dollop and spread glaze evenly on each chilled ball, Or simply drizzle over each ball. Place in fridge to allow to set before serving.
    Store in an airtight container in the fridge for up to 7 days, or freeze for up to 2 months.
