Ingredients

Coconut Filling

  • 1 cup coconut butter, softened, (store bought or homemade recipe below in notes).
  • 1 cup desiccated coconut
  • 1/2 cup almond flour (or coconut flour)
  • 1/2 cup vanilla protein powder
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Carob Topping

  • 1/2 cup carob powder
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut butter

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a medium bowl, combine coconut butter, shredded coconut, almond flour, protein powder, maple syrup, vanilla and sea salt.
    Mix until a thick dough forms.
    Press mixture firmly into the prepared pan.
    Freeze for 30-45 minutes until firm.

Carob Topping

  • In a small bowl, whisk together carob powder, coconut oil, maple syrup and coconut butter until smooth.
    Pour the mixture over the bars and refrigerate until the coating sets.
    Lift out and cut into 8-10 bars or smaller squares.
    Store in the refrigerator and enjoy chilled.
    Notes:
    If the filling is too dry, add a tablespoon of coconut milk.
    If too soft, add a little extra protein powder or shredded coconut or place in the fridge for 20 minutes to firm it up.
    Store in the refrigerator for up to 1 week or freezer for up to 2 months.
    Sprinkle with extra shredded coconut before the coating sets for a decorative finish.
    Blended Bites Tips 💡
    Use softened coconut butter for easier mixing. Place jar in warm water for a few minutes or give it a couple of 10 second bursts in the microwave.
    Store bars in the refrigerator during warmer weather, as coconut butter softens at room temperature.
    And don't skip the pinch of sea salt - it helps balance the sweetness, enhances the overall flavor and provides important minerals to your diet.
