Caramel Protein Fluff (A Healthy Bedtime Snack)

Ingredients

  • 1 1/2 cups banana, sliced, frozen
  • 1 scoop caramel or vanilla protein powder
  • 2-3 tablespoons date caramel sauce (recipe below in notes)
  • 1/4 cup almond or coconut milk (add slowly)
  • Optional: pinch of sea salt or cinnamon 

Toppings Optional

  • Crushed nuts
  • Chocolate chips
  • Coconut flakes

Instructions

  • Make the date caramel sauce first (recipe below in notes) so its ready when you wish to make the protein fluff.
    Add all ingredients to a high-speed blender or food processor.
    Blend on high, stopping to scrape down the sides as needed.
     Continue blending until thick, smooth, and fluffy.
    Serve immediately with your choice of toppings.

Notes

Date Caramel Sauce
1 cup dates, soaked at least 30 minutes and drained
1/2 cup coconut milk or cream, full fat
1 teaspoon vanilla extract
Pinch sea salt
Combine all the ingredients in a high speed blender.
Blend on high until very smooth and creamy. You can adjust the consistency by adding more coconut milk if it is too thick to pour easily.
Keep in an air-tight container in the fridge for up to 2 weeks, ready to dollop on EVERYTHING!
