Brownie Protein Freezer Cups

Ingredients

Brownie Layer

  • 1 cup almond flour
  • 2 tablespoons maple syrup or honey
  • 2 tablespoons cocoa powder
  • 2 tablespoons of any milk
  • 1 teaspoon vanilla extract

Ice Cream Filling

  • 1 1/2 cups Greek yogurt
  • 1/3 cup vanilla protein powder
  • 2 tablespoons of any milk
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 2 tablespoons coconut oil

Instructions

  • Line a cupcake pan with 6 paper liners. Or use a silicon muffin pan or any snack mold of choice.
    Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, stir and paint the inside of each cupcake liner, drawing it up the sides about 1 inch with a spoon. Save half of the melted chocolate for the top. 

Brownie Base

  • To a bowl, add brownie ingredients and stir into a sticky dough. Divide and press the dough into the cups and level off.

Ice Cream Filling

  • Place all ice cream ingredients in a small bowl and mix until smooth. Spoon onto the brownie base.
    For a soft-serve texture for the filling it is best to eat immediately after an hour of freezing. Allow the freezer cups to sit at room temperature for 5 minutes before serving for the best texture.
    After that, they must be stored frozen but ice cream made with yogurt will become very hard. Store frozen for up to two months. Allow time to thaw before eating.
    Variations
    Add chocolate chips to the ice cream filling for extra crunch.
    Swap Greek yogurt for coconut yogurt for a dairy-free version.
    Stir in chopped walnuts for a classic brownie flavour.
    Add a tablespoon of espresso powder for a mocha twist.
    Top with cacao nibs for extra texture.
