Blueberry Pomegranate Yogurt Protein Bark

A refreshing, no bake frozen treat made with thick Greek yogurt, protein powder, juicy blueberries and vibrant pomegranate seeds. This protein-rich yogurt bark is creamy, lightly sweet, and packed with antioxidants - perfect as a healthy dessert,post-workout snack, or grab-and-go freezer treat.

Ingredients

  • 2 cups thick Greek-style yogurt
  • 2 scoops vanilla or unflavoured protein powder
  • 1-2 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries (fresh or frozen)
  • 1/3 cup pomegranate seeds

Optional Add-Ins

  • 1-2 tablespoons collagen peptides
  • 1-2 tablespoons hemp or chia seeds for extra protein and fibre

Instructions

  • In a bowl, whisk Greek yogurt, protein powder, sweetener, vanilla, and salt until smooth and thick.
    Spread the yogurt mixture evenly onto a lined baking tray.
    Sprinkle blueberries and pomegranate seeds evenly over the top, gently pressing them into the yogurt.
    Add any optional toppings if using.
    Freeze for 2–3 hours, or until completely firm.
    Break or cut into bark-style pieces and store in an airtight container in the freezer.
