Ingredients

  • 2 cups frozen blueberries
  • 1 banana, sliced, frozen
  • 1 scoop vanilla protein powder
  • 1/3 cup full-fat coconut milk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1/2 teaspoon vanilla extract (optional)
  • 1-2 tablespoons extra coconut milk, if needed for blending

Optional Toppings

  • Fresh blueberries
  • Lemon zest
  • Toasted coconut flakes
  • Chopped nuts
  • Hemp seeds
  • Granola
  • White chocolate shavings

Instructions

  • Place the frozen blueberries, frozen banana, protein powder, coconut milk, lemon juice, lemon zest, and vanilla extract into a high-speed blender or food processor.
    Blend until thick, smooth, and creamy, stopping to scrape down the sides as needed.
    If the mixture is too thick, add extra coconut milk one tablespoon at a time until until it is a smooth texture.
    Serve immediately for a creamy soft-serve texture.
    For a firmer dessert, freeze for 20–30 minutes before scooping.
