Blueberry Lemon Cheesecake Protein Balls

Ingredients

  • 1/2 cup coconut flour
  • 1/2 cup protein or collagen powder
  • 1/2 cup blueberry puree (see note below)
  • 1/4 cup cream cheese
  • 1/4 cup honey or maple syrup
  • 1/4 cup desiccated coconut
  • 1 lemon, juice and zest

Instructions

  • In a bowl, combine the protein powder, coconut flour and desiccated coconut. Add the blueberry puree, cream cheese, honey, lemon juice and zest to the dry ingredients.
    Using a wooden spoon or your hands, knead the mixture until a dough forms. If the dough is too soft, add more coconut flour; if too thick, add a teaspoon of water or honey to adjust the consistency.
    Roll the dough into 1½ tablespoon-sized balls. Makes 20-25 depending on your preferred size.
    Enjoy immediately or refrigerate for 10-15 minutes to firm up. Store leftovers in an airtight container in the refrigerator for up to 1 week or in freezer for up to 3months.
    Note: To make the blueberry puree, mash fresh blueberries with a fork or blend them in a small blender. For a vibrant color, add a splash of lemon juice to the blueberries when mashing or pureeing; the acidity helps maintain the bright hue.
