Ingredients

  • 1 cup blueberries, fresh or frozen
  • 1/2 cup lemon juice
  • 1/2 cup water
  • 4 tablespoons gelatin
  • 2-4 tablespoons honey or maple syrup, to taste
  • 1 teaspoon lemon zest, finely grated

Instructions

  • Place blueberries, lemon juice, zest and water into a sauce pan, and heat over medium heat.
    Stir blueberries, and allow to cook until the liquid is steaming, and the blueberries are plump.
    Take off the heat and add honey, start with 2 tablespoons, taste test and add more if you think it needs it. Let cool to room temperature
    Place blueberry mixture into a high speed blender, or food processor, and blend until smooth.
    Add gelatin to the blender, and blend again until smooth.
    Pour mixture into candy molds, or a 8 x 8-inch pan or glass dish, and refrigerate for 30 minutes to an hour.
    Remove from moulds or cut into small squares, then store in an airtight container in the fridge for up to 5 days. These are freezer friendly too.
