Blueberry Greek Yogurt Protein Bars

Ingredients

  • 3/4 cup almond flour
  • 1/2 cup protein powder* preferably unflavored or light colored like vanilla
  • 1/2 cup coconut flour
  • 1/2 cup thick Greek-style yogurt
  • 1/2 cup blueberry puree - (puree blueberries in a small blender, or mash with a fork).
  • 2 tablespoons honey or maple syrup

Chocolate Coating

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Mix together all the ingredients except the white chocolate.
    Add more coconut flour (a teaspoon at a time) if the dough is too soft; add a teaspoon or more of any milk or water if the dough is too thick. Add more honey if you think its needed.
    Shape dough into a rectangular mound, then wrap in plastic wrap or an airtight container, and let the dough set in the fridge for at least 30 minutes.
    Slice into 5 bars or more smaller squares. Place in the freezer for 1-2 hours so the bars are firm and set when you coat them in chocolate.  

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted use two forks to hold each protein bar and one by one, dip into the melted chocolate. Roll around until fully coated, then place back on the parchment lined tray.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Drizzle with more chocolate if desired.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
