These blueberry gelatin squares are the perfect treat. Packed with minerals and protein they are a great post-workout snack (or any snack for that matter) and a great treat for children too!
2cupsfrozen blueberries (or use two different berries and make 2 layers as in the image)
2cupswater
1/4cuphoney
4tablespoonsgelatin
1lime, juice and zest
Instructions
Bring blueberries and water to a boil for about 2-3 minutes. Add the rest of the ingredients to the pot.Let cool a bit then transfer the mixture to a blender and blend until fully incorporated.Pour into a Pyrex dish or mold of your choice.Let the blueberry jello sit on the counter for an hour prior to transferring it to the refrigerator. Refrigerate for at least 4 hours until fully set. Cut into cubes or pop out of molds to serve.
