Instructions
If using coconut cream: Refrigerate the can of full-fat coconut milk or coconut cream overnight or at least 2-4 hours. When ready to use, scoop out only the thick, solid cream from the top of the can that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard. If using heavy dairy cream: Pour the cold heavy cream into a chilled mixing bowl. Using an electric mixer, whip on medium-high speed until soft peaks form. Be careful not to overwhip - you want the cream fluffy and smooth, not stiff or grainyIn a separate bowl or blender, combine the softened cream cheese, blueberries, protein powder, vanilla, lemon zest, and maple syrup or honey. Blend until completely smooth.Gently fold the blueberry mixture into the whipped cream until completely combined and fluffy. Don't stir vigorously at this stage - gentle folding helps retain the light, airy texture that makes this dessert "fluff."Spoon into 4 serving glasses or bowls and refrigerate for 30–60 minutes for a firmer texture, or enjoy immediately.Top with fresh blueberries, lemon zest, coconut, or chopped nuts.Store covered in the refrigerator for up to 3 days. For the best texture, give it a gentle stir before serving if it has been refrigerated overnight. One important note: If using coconut cream, the final texture may be slightly denser than when using dairy cream, but it will still be deliciously creamy and fluffy.
