Blue Spirulina Chia Protein Pudding

This pudding recipe is a creamy and smooth anti-oxidant ‘meal-in-a-bowl’ that features chia seeds and spirulina, an incredible superfood with amazing health properties.

Ingredients

  • 1/4 cup chia seeds
  • 1 teaspoon blue spirulina powder
  • 1 cup milk of choice
  • 2 tablespoons vanilla protein powder
  • 1-2 tablespoons honey or maple syrup - or to taste
  • 1/2 teaspoon vanilla extract

Layered With Whipped Coconut Cream

Instructions

  • In a glass storing jar or container, add the chia seeds, blue spirulina powder, milk, protein powder, honey and vanilla extract. Whisk well to combine and then, let it sit for about 10 minutes or so.
    Whisk again and make sure there are no clumps, then seal and transfer to the fridge. Let the pudding chill for at least 1-2 hours (or until set) before enjoying. You can make it the night before.
    You can eat by the spoon from the container or serve the pudding layered with whipped coconut cream as seen in the image (recipe below in notes).
