Blue Ocean Protein Nice Cream

This blue ice cream is the ultimate no churn ice cream recipe! Not only does it look vibrant and fun, but its is super creamy and delicious! It gets the vibrant blue color naturally from blue spirulina powder so no artificial dyes here and you can’t even taste it.

Ingredients

  • 2 bananas, sliced, frozen
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/2 cup dates, soaked at least 30 minutes and drained
  • 2 scoops protein or collagen peptides powder
  • 1 teaspoon blue spirulina powder
  • 1 teaspoon vanilla extract

Instructions

  • Note: Place the can of coconut cream in the fridge or freezer for at least two hours before making nice cream to allow coconut cream to separate.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, to drink, or discard.
    Let the bananas thaw a bit (just 5 minutes or so),which will make them slightly easier to blend, then throw them along with the hardened coconut cream, dates,  protein powder, blue spirulina powder and vanilla extract into a food processor or high speed blender.
    Start blending on its lowest speed, then quickly increase to the highest speed, using the tamper to press ingredients toward the blades. Blend for 30 to 45 seconds or until smooth and creamy. Add a splash more milk if needed to get it blending.
    You can eat the nice cream straight out of the blender if you like the soft-serve texture. For a firmer texture, spoon the mixture into a dish and set it in the freezer for about 30 minutes until it firms up. Then just scoop, serve, and enjoy!
    Serve straight away or freeze for later. If frozen, allow to thaw for 20 minutes to let its often before scooping.
