Ingredients

  • 1 cup cottage cheese or thick Greek-style yogurt of a mix of half and half
  • 1 cup milk of choice
  • 1/4 cup chia seeds
  • 2 scoops protein or collagen peptides powder
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract

Optional Toppings

  • Dollop of whipped coconut cream – recipe below in notes
  • Fresh fruit or berries
  • Peanut or almond butter drizzle
  • Roughly chopped pumpkin or sunflower seeds
  • Hemp hearts (seeds)
  • Nutty and/or seedy granola
  • Chopped pistachios, peanuts or almonds

Instructions

  • Combine the ingredients in a high speed blender or food processor, adding chia seeds last. Blend till smooth, scraping down the sides every so often – at least 30 seconds to 1 minute.
    Place in 2 individual cups or one storage container and let sit for at least 2 hours, or overnight. Spoon into individual serving cups and eat plain or with topping suggestions.
