Black Bean Protein Brownie Bites (No Bake)

Ingredients

  • 1 cup cooked black beans, rinsed and drained well
  • 1/2 cup almond butter or peanut butter
  • 1/2 cup chocolate or vanilla protein powder
  • 1/3 cup maple syrup
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch sea salt

Chocolate Topping

  • 1/2 cup chocolate chips
  • 2 tablespoons milk

Optional Add-Ins

  • 1/4 cup dark chocolate chips or cacao nibs
  • 1-2 tablespoons almond milk (if mixture is too thick)
  • Pinch of espresso powder (for deeper chocolate flavour) 

Instructions

  • Add black beans to a food processor and blend until completely smooth, scraping down the sides as needed.
    Add nut butter, maple syrup, cocoa powder, protein powder, vanilla, and salt.
    Process until the mixture is thick, smooth, and brownie-like.
    If the mixture feels too thick or dry, add almond milk one tablespoon at a time until it reaches a soft, scoopable consistency.
    Pulse in any optional add-ins, or stir them through by hand.
    Scoop tablespoon-sized portions and roll into bite-sized balls. Place on a lined plate or tray or use a silicon snack mold and press brownie batter into mold, filling wells halfway.
    Chill in the fridge for 20–30 minutes to firm up while you melt the chocolate topping.

Chocolate Topping

  • Place chocolate chips in a small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips.
    Once melted add the milk and with a spoon place a dollop on top of each bite or add the mixture to a frosting bag and pipe on top of each bite.
    Freeze until firm, about 1 hour.
    Store brownie bites in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
