Ingredients

  • 1 1/2 cups rolled oats
  • 1 scoop vanilla protein powder
  • 1/2 cup cream cheese,softened by leaving at room temperature for an hour or so or give a couple of bursts in the microwave
  • 1/4 cup natural cashew butter or almond butter
  • 2 tablespoons maple syrup or honey
  • 2 teaspoons vanilla extract
  • 1/4 teaspoons almond extract (optional)
  • Pinch of sea salt
  • 2 tablespoons natural rainbow sprinkles

Yogurt Glaze

  • 1/2 cup thick Greek yogurt
  • 2 tablespoons vanilla protein powder
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract

Decoration

  • 2 tablespoons natural rainbow sprinkles

Instructions

  • Add the oats to a food processor and pulse a few times until they resemble coarse flour.
    Transfer to a mixing bowl and stir in the protein powder and sea salt.
    Add the cream cheese, nut butter, maple syrup, vanilla and almond extract.
    Mix until a soft dough forms.
    Fold in the rainbow sprinkles.
    Roll into 16-20 evenly sized balls and place on a lined tray.
    Refrigerate for 30 minutes to firm up. 

Yogurt Glaze

  • Whisk together the Greek yogurt, protein powder, maple syrup and vanilla until smooth.
    Dip or drizzle each protein ball with the yogurt glaze.
    Immediately decorate with extra sprinkles.
    Refrigerate for another 20-30 minutes until the glaze is set.
    Notes
    If the mixture feels too sticky, add a little more oats or protein powder.
    If it's too dry, mix in another spoonful of Greek yogurt or nut butter.
    Store in an airtight container in the refrigerator for up to 5 days or freezer for up to 2 months.
    For the best texture, let refrigerated protein balls sit at room temperature for 5 minutes before serving.

    If the mixture feels sticky, chill it for 20 minutes before rolling.
