Ingredients
1 1/2cupsoat flour (oats blended to a flour)
1/2cupalmond flour
2scoopsvanilla protein powder
1/4cupmaple syrup or honey
1/4cupmilk of choice
3tablespoonsmelted coconut oil or butter
1teaspoonvanilla extract
1/4teaspoonalmond extract (optional, but recommended)
3tablespoonsrainbow sprinkles
Toppings Optional
White or dark chocolate drizzle
Chocolate chips
Shredded coconut
Chopped nuts
Instructions
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a mixing bowl, combine oat flour, almond flour and protein powder.Add maple syrup, melted coconut oil, milk, vanilla and almond extract.Mix until a thick, slightly sticky dough forms.Press the mixture into the prepared dish and smooth the top.Sprinkle with sprinkles.Refrigerate for at least 2–3 hours, or until fully set.Slice into 8-10 bars and enjoy.   Store in the fridge for up to 1 week or freezer for up to 3 months.  Â
