Birthday Cake Oat Protein Bars

Ingredients

  • 1 1/2 cups oat flour (oats blended to a flour)
  • 1/2 cup almond flour
  • 2 scoops vanilla protein powder
  • 1/4 cup maple syrup or honey
  • 1/4 cup milk of choice
  • 3 tablespoons melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional, but recommended)
  • 3 tablespoons rainbow sprinkles

Toppings Optional

  • White or dark chocolate drizzle
  • Chocolate chips
  • Shredded coconut
  • Chopped nuts

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a mixing bowl, combine oat flour, almond flour and protein powder.
    Add maple syrup, melted coconut oil, milk, vanilla and almond extract.
    Mix until a thick, slightly sticky dough forms.
    Press the mixture into the prepared dish and smooth the top.
    Sprinkle with sprinkles.
    Refrigerate for at least 2–3 hours, or until fully set.
    Slice into 8-10 bars and enjoy.   
    Store in the fridge for up to 1 week or freezer for up to 3 months.
