Base Crust
1/2cupalmond meal (flour)
1/2cupdesiccated coconut
1/2cupoats, instant or quick
1/4cuphoney or maple syrup
1/4cupcoconut oil, melted

3/4cuppeanut butter
1/2cupalmond or coconut flour
1/4cuphoney or maple syrup

1cupchocolate chips
1tablespooncoconut oil
1/4cuppeanut (or any other nut) butter

Base Crust
Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a medium mixing bowl, add all base crust ingredients. Mix until fully combined. Transfer to the lined baking dish and refrigerate.
Peanut Butter Layer
In a microwave-safe bowl or stovetop, combine peanut butter with honey and gently melt. Add almond flour, honey and coconut oil and mix well until a thick fudge batter is formed. Pour over the base and refrigerate.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted add the peanut butter and stir until combined. Pour the chocolate over the peanut layer and sprinkle with flaky salt. Place it in the fridge to set for 15-20 minutes.To slice, place a sharp knife in a jug of boiling water to heat it. Wipe the knife dry and gently cut, allowing the heat from the knife to melt through the slices.Cut into 12-16 bars or more smaller squares depending on your size preference.Store these slices in an airtight container in the fridge and consume them within a week. Alternatively, you can freeze any unused portions for up to 3 months and defrost them as needed.Allow the bars to soften at room temperature before eating.
