Ingredients

  • 1 cup frozen cauliflower, banana or frozen berries
  • 1 scoop vanilla or chocolate protein powder
  • 1/2 cup almond milk (or milk of choice)
  • 1/2 teaspoon xanthan gum
  • 1-2 teaspoons maple syrup or sweetener of choice (optional)
  • 1-2 tablespoons chocolate chips

Instructions

  • Add frozen cauliflower, banana or berries, protein powder, milk, xanthan gum, and sweetener to a high-speed blender.
    Blend on high for 1–2 minutes.
    Stop and scrape down the sides. Blend again until thick, fluffy and increased in volume.
    Fold through the chocolate chips. Spoon into a bowl and add any toppings.
    Enjoy immediately for best texture.
    Customise Your Fluff
    One of the best things about protein fluff is how adaptable it is.
    Make it chocolate overload:
    Add 1 teaspoon cacao powder and use chocolate protein.
    Make it cookie dough style:
    Add a drop of almond extract and extra mini chocolate chips.
    Add 1 tablespoon tahini for a halva-like flavor twist
    Use dark chocolate for antioxidant richness
    Want it thicker?
    Use slightly less liquid.
    No xanthan gum?
    You can skip it, but the fluff won’t be quite as airy. It will still be thick and spoonable.
