Ingredients

  • 1 cup rolled oats
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/2 cup almond butter (or cashew butter)
  • 1/2 cup dried blueberries (or crushed freeze-dried blueberries)
  • 1 scoop vanilla protein powder
  • 1-2 tablespoons almond milk (if needed for texture)
  • Pinch of sea salt
  • Optional: ½ teaspoon lemon zest

Instructions

  • Place all ingredients except dried blueberries and lemon zest if using in a food processor and process until well combined. If mixture feels too dry, add 1 tablespoon almond milk at a time until it holds together when pressed.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your snack balls.
    Gently fold in the dried blueberries and lemon zest (if using).
    Scoop and roll into 12-14 small balls using your hands.
    Place in the fridge for at least 30 minutes to firm up.
    Keep in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
