Ingredients

  • 2 cups Greek-style yogurt - plain or vanilla
  • 1 banana, sliced
  • 1/4 cup peanut (or any other nut or seed) butter
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons chocolate chips
  • 2 tablespoons crushed peanuts

Instructions

  • Cover a flat tray with parchment paper. In a bowl, mix together the Greek yogurt, peanut butter and honey until smooth.
Spread it out onto a tray, about ¼-inch thick. I wouldn't go any thicker than that otherwise it will be hard to bite!
Top with banana slices, chocolate chips and crushed peanuts. Place in the freezer for 2-3 hours.
When it's time to cut it, take the bark out with the parchment paper. Give it 2-3 minutes to slightly thaw. Cut on a chopping board or break into 10 pieces or your preferred size. Store in a container in your freezer,
