Ingredients
3largeripe bananas, sliced and frozen
2tablespoonsnatural peanut butter, almond butter, or cashew butter
1scoopvanilla protein powder
1teaspoonvanilla extract
Pinch of sea salt
1-2tablespoonsmilk of choice, only if needed for blending
Chocolate Coating
1cupdark chocolate chips
1tablespooncoconut oil
Optional Toppings
Chopped peanuts or almonds
Toasted coconut

Instructions
Slice the bananas into coins and freeze them in a single layer for at least 4 hours, preferably overnight.Add the frozen banana slices, nut butter, protein powder, vanilla and salt to a food processor or high-powered blender.Blend until smooth and creamy. Stop and scrape down the sides as needed. Add a tablespoon of milk only if necessary.Spoon the mixture into silicone mini muffin moulds or scoop small mounds onto a baking paper-lined tray.Freeze for 1–2 hours until firm enough to handle.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Dip each frozen nice cream bite into the melted chocolate.Place back on the lined tray and immediately add any toppings before the chocolate sets.Freeze for another 15–20 minutes until the chocolate is completely firm.Allow the bites to sit for 2–3 minutes before eating for the creamiest texture.Store in an airtight container in the freezer for up to 1 month. Separate layers with baking paper to prevent sticking.
