Banana bark is a viral no-bake, healthy sweet treat made by combining layers of banana, peanut butter, and chocolate, which is then frozen and broken into pieces. It is a simple, customizable snack often considered a healthier alternative to a frozen candy bar.
Line a baking sheet with parchment paper (parchment paper works best to make sure that your banana bark doesn't stick once frozen).Arrange your banana slices in an even layer, making sure the banana slices are touching but not overlapping. You want them all to end up as one layer so when frozen it all holds together. Optional: If you want a thinner banana layer, place a piece of parchment paper on top and press down on the bananas carefully with the bottom of a glass.
Next, drizzle the melted peanut butter evenly on top of the banana layer and spread out with a silicone spatula or the back of a spoon.
In a small dish, melt the chocolate chips and coconut oil together in 30 second bursts in the microwave stirring between each burst and pour over the peanut butter layer. Spread evenly and sprinkle with coconut flakes, salt or any other toppings of choice such as: mini M&Ms, sprinkles, chocolate chips, drizzled peanut butter, or chopped nuts.
Freeze the banana bark for 1-2 hours or until set. When ready to serve, break the bark into pieces and enjoy. Store leftover bark in the freezer in an airtight container or freezer safe bag
