Avocado Fudge Bites

Today I have a lil sweet treat recipe for you that’s on the healthier side.
The recipe I adapted this from calls it a mousse. When I think of a mousse, I think light, fluffy, and airy. While this is uh-MAZingly, blissfully, delicious, I would not call it fluffy.
To me, it is more like fudge. Thick, creamy, rich, chocolatey, coconutty, buttery fudge. I kept it for a few days in the fridge,and that’s about how long I’d leave this. Its so good, it won’t last anyway.
It’s incredibly rich, so even though you’re going to want to eat a giant portion of it, I wouldn’t recommend it.
Its a dessert made with avocado…it seems weird, I know. But you don’t taste the avocado at all! I swear! It just gives the fudge a decadent, smooth, creaminess that is to die for.  Its full of good stuff, nuts and flavour and it's the perfect healthy snack for the fridge or freezer.
Satisfy your sweet tooth the healthy way with these delectable avocado fudge bites coated in chocolate. Rather than the pure sugary rush of conventional fudge, this one has real substance with style.
Don’t forget, these are all good fats, so you can pretty much write this one off as health food. It really is more satisfying than your average treat!

Ingredients

  • 1 cup avocado, mashed
  • 1 cup coconut butter, melted, store bought or recipe below in notes
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 2 teaspoons coconut oil

Instructions

Fudge Bites

  • In a small bowl, mix together all ingredients until smooth.
    Scoop into a small plastic container or a silicon candy mold and freeze until set (at least 3 hours).
     

Chocolate Coating

  • Remove the fudge bites and after checking they are firm and set pop out of molds or remove from dish or pan and cut into squares, or use the cookie scoop and make little balls ready for the chocolate coating.
    Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Skewer each cube or ball or use 2 forks to hold each one, or a fork underneath each one. Dip into the melted chocolate, then place on a rack to dry. Dip twice for extra coating.
    Put the fudge bites into the freezer for at least 3 hours. Once chocolate is set and crisp, enjoy your Avocado Fudge Bites.
    Leftovers should be stored in the fridge or freezer for up to 1 week
