Avocado Coconut Protein Nice Cream

This beautiful Nice Cream recipe is an extra-creamy tropical delight. With only seven ingredients the ice cream base goes together in minutes. Enjoy it as is or add your favorite toppings. Once you taste it, you won’t believe that this ice cream is made with avocado.

Ingredients

  • 2 ripe avocados, peeled, pitted, frozen
  • 1 banana, sliced, frozen
  • 1 13.5 oz can full-fat coconut milk
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract
  • 1/2 cup desiccated coconut

Toppings Optional

  • Fresh fruit or berries
  • Chopped nuts
  • Seeds like hemp or chia

Instructions

  • In a blender or food processor, combine the avocados, banana, coconut milk,   honey, protein powder, vanilla extract. Blend until smooth and creamy.
    Taste test and add more honey or vanilla if you think it needs it. Stir in the shredded coconut.
    Serve as is for a soft serve version or pour the mixture into a freezer-safe container, cover and freeze for at least 4 hours or until firm.
    For a softer texture, you can freeze for a shorter time and stir every hour.
    Once frozen, scoop the ice cream into bowls and top with fresh fruit and   chopped nuts.
