2ripe avocados, pitted
1cupdark chocolate chips
113.5 ozcan coconut cream, full fat (solid part only) *see note below
1/4cupprotein or collagen peptides powder
1teaspoonvanilla extract

Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.When you are ready to make the fudge, open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.Place the hardened cream along with the chocolate chips in a small saucepan over a low heat until melted.Take off the heat and add protein powder and vanilla extract and mix until well combined. In a food processor, combine the avocado and melted chocolate mixture and process until smooth and well combined. Pour into the lined baking dish. Sprinkle with coconut if desired. Freeze for about 1 hour. Cut into 16 squares to serve.Store leftovers in the fridge for up to 1 week or freezer for up to 3 months.
