Apricot Snow Logs

These simple delicious logs really are so easy to make – all you need is a food processor and a few ingredients.  They can be made in under 15 minutes, and are the perfect anytime sweet treat or lunch box filler - 100% plant-based delicious fruity snack for all ages!
These little tubes of apricot-y goodness rolled in coconut, are sweet and flavourful - a great snack to enjoy when feeling like you need a boost.
You can happily store them in the fridge for up to a month, or in the freezer for up to three. If you keep them in the freezer they will be a slightly chewier firmer texture, but fridge is perfect too – try out both and see what you prefer.

Ingredients

  • 1 cup dates soaked at least 30 minutes and drained
  • 1 cup nuts (almonds, walnuts, cashews - your choice or a mix)
  • 1 cup apricots, dried soaked at least 30 minutes and drained
  • 1 cup desiccated coconut (1/2 cup of coconut to use in the mixture, and the other 1/2 cup of coconut to roll the logs in at the end)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon or any other spice

Instructions

  • Place nuts in a food processor and process until broken down and crumbly. Add dates, apricots, ½ cup coconut, coconut oil, vanilla extract and spices if using and continue to process until well combined. You can leave the mixture a little chunky for texture.
  • Scoop out small handfuls (tablespoon size or ½ - ¾ inch thick ) and roll into logs (you could roll them into balls, too), then roll in coconut in a separate bowl. If the mixture is too sticky simply put it in the fridge for 20 minutes to firm it up before rolling.
    Place in a sealed container and store in the fridge for a softer texture, or freezer for a firmer, chewier texture (or if they’re going straight into lunch boxes and will be travelling for a bit).
