1cupdried apricots
1cupcashews or almonds
1/2cupdates
1/2cupdesiccated coconut, plus extra for rolling
1/2cupvanilla or unflavoured protein powder
2tablespoonscoconut oil, melted
1teaspoonvanilla extract
vanilla extract
1-3tablespoonswater or milk (as needed)

Instructions
If your apricots and dates are firm, soak them in warm water for 10 minutes, then drain well.Add apricots, cashews and dates to a food processor. Blend until broken down into a sticky, crumbly mixture.Add coconut, protein powder, coconut oil, vanilla, and salt.
