Apricot Date Protein Balls

Ingredients

  • 1 cup dried apricots
  • 1 cup cashews or almonds
  • 1/2 cup dates
  • 1/2 cup desiccated coconut, plus extra for rolling
  • 1/2 cup vanilla or unflavoured protein powder
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract

  • 1-3 tablespoons water or milk (as needed)

  • Hemp seeds
  • Lemon zest
  • Chopped nuts
  • White chocolate chips

Instructions

  • If your apricots and dates are firm, soak them in warm water for 10 minutes, then drain well.
    Add apricots, cashews and dates to a food processor. Blend until broken down into a sticky, crumbly mixture.
    Add coconut, protein powder, coconut oil, vanilla, and salt. Blend again until the mixture comes together.
    Add water or milk one tablespoon at a time until a soft, slightly sticky dough forms.
    Scoop and roll into 10-12 (more or less) bite-sized balls.
    Roll each ball in extra shredded coconut.
    Refrigerate for 20–30 minutes or freeze for 10–15 minutes until firm.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
    Best enjoyed chilled for the perfect texture.
    Easy Variations
    Apricot Lemon: Add fresh lemon zest for brightness
    Tropical Twist: Add a little dried pineapple
    Vanilla Cream: Use vanilla protein and add extra coconut
