Almond Joy Coconut Protein Shake

Creamy, chocolatey, and packed with protein, this Almond Joy Protein Shake tastes just like the candy bar but with a healthy twist. It makes the perfect breakfast on the go or an afternoon treat. Its creamy, coconutty, and exactly what you need and with good for you ingredients this shake will hit the spot.

Ingredients

  • 1 1/2 cups coconut or almond milk
  • 4 frozen coconut cubes made from 1 x 13.5 oz can full fat coconut cream or milk (simply freeze in an ice cube tray and toss in smoothies and protein shakes)
  • 1 banana, sliced, frozen
  • 2 scoops protein or collagen peptides powder, chocolate or vanilla
  • 1/4 cup toasted, sliced almonds (save some for topping if desired)
  • 1/4 cup toasted, desiccated coconut (save some for topping)
  • 2 dates, , or 2 tablespoons honey or maple syrup
  • 2 tablespoons almond butter
  • 1 tablespoon cocoa or cacao powder
  • 1 teaspoon vanilla extract

Optional Toppings

  • Dollop of coconut whipped cream – recipe below in notes
  • Toasted, shredded coconut
  • Toasted, sliced almonds
  • Chocolate chips 

Instructions

  • Preheat oven to 350°F. Spread out sliced almonds and shredded coconut on a baking sheet and bake for 8-10 minutes, until coconut and almonds are slightly browned and fragrant.
    Place about 1/4 cup of the toasted almonds and coconut into a blender along with all the rest of the ingredients and blend until completely smooth. Use the leftover almonds and coconut for the topping along with your extra choices.
    Pour into 2 glasses, top with your choice of toppings and serve immediately.
