Ingredients

  • 1 1/2 cups dates, soaked 30 minutes and drained
  • 3/4 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/4 cup protein or collagen peptides powder
  • 1/4 cup dried cranberries or raisins
  • 1/4 cup seeds (hemp, pumpkin, sunflower or a mix)
  • 1 teaspoon vanilla extract
  • 1/4 cup desiccated coconut to roll balls in

Instructions

  • In a food processor add all ingredients and pulse a few times until combined.
Be careful not to over process as its nice to have texture variance and different sized “bits” in your protein balls.
Scoop out a spoonful of the batter and roll it into a ball. Repeat until you run out of batter (approximately 12 bites). Roll balls in coconut if desired.
Place in the refrigerator to chill before eating
Store in the fridge for up to 1 week or freezer for up to 3 months.
