Chocolate Protein Stuffed Dates

These healthy candy-like protein stuffed dates taste incredible, all while being made with a handful of nourishing ingredients.  Protein-rich chocolate filling is stuffed into Medjool dates and when frozen, become caramel-like and are absolute heaven! Think, natures Snickers Bar! Oh my!

Ingredients

  • 8 Medjool dates
  • 1/4 cup nut butter (I used cashew butter, but you could also use peanut butter, almond butter, tahini (sesame seed paste) or coconut butter)
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon cocoa powder
  • 1 tablespoon honey or maple syrup
  • 1 scoop protein or collagen peptides powder, chocolate or vanilla
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon flaky salt – optional

Instructions

  • Place the nut butter and the coconut oil in a small saucepan and warm over LOW heat until runny. Remove from the heat and whisk in the honey until well combined.
    Add cocoa powder, protein powder and vanilla extract and stir everything together until you have a fudgy cookie-like batter.
    Meanwhile, slice the dates lengthwise, but not all the way through, just enough to remove the pit.
    Fill each date with a teaspoon or so of the filling, sprinkle with flaky salt if desired.
    Place in the fridge for at least 30 minutes for the chocolate to set before serving.
    Store in fridge for up to1 week or freezer for up to 3 months.
    Note: The longer they are in the freezer, the more caramel-like the dates become. They get super gooey!
